Pumpkin Bread Recipe as promised!

pumpkin_souppumpkin_pieYesterday I promised my pumpkin bread recipe.  I just love pumpkin season, time to make those delicious breads and Pies.  Maybe I’ll try pumpkin soup!  I created this recipe years ago, I hope you will enjoy it!

 

 

Pumpkin Bread (Mary Jane Driscoll)

2 and 1/2 cups flour (make it more nutritious by using whole wheat)

1/2  Cup Sugar (You can add more if you like a sweeter bread)

1 tsp. baking sodapumpkin_bread

1 tsp. salt

1 and 1/2 tsp Cinnamon

1/2 tsp. allspice  (you can also use ground cloves if you prefer)

1/2 tsp. ginger

2 cups pumpkin

2 or 3 eggs (if they are extra large 2 otherwise 3)

3/4 cups melted butter 

Optional 1/2 cup chopped nuts of your choice.

Mix all dry ingredients together in one bowl,  Mix all wet ingredients together in another bowl.  Pour the wet ingredients into the dry ingredients and stir till well blended.  (If using whole wheat flour you may need to add  1/2 cup Milk or water)

Pour into either 2 loaf pans or a 9 X 13 pan.  Bake at 350 degrees for about 40 minutes or till bread bounces back when lightly pressed with finger or toothpick comes out clean.

This recipe makes a nice moist bread.  IF you want it to taste more like cake use 1 cup sugar and add 1/2 cup milk.  We like to eat it with butter!
